Welcome to the second edition of our special feature ‘Culinary Swissness.’ This guide explores the rich history, various regional cuisines and global influence of Swiss culinary traditions. While Switzerland is renowned for its world-class cheese and chocolate, the country’s culinary landscape is far more diverse. From the mountains to the cities, each canton boasts its own unique cuisine, influenced by neighbouring cultures. This diversity makes it difficult to define a single ‘Swiss cuisine’. In essence, Switzerland is a melting pot of flavours and cooking styles rooted in tradition, with wine, cheese and legendary bread culture all contributing to the unique culinary Swissness.
We recognise that it is not always possible to determine whether a person was a Swiss citizen at the time they contributed to Culinary Swissness. Furthermore, we acknowledge that some of the regions discussed in this booklet were not part of Switzerland during the periods in question. For the description of the relevant aspects of the country’s culinary history in this guide, the territory of present-day Switzerland is used as the framework.
